Happy Cinco de Mayo! Themed meals and crafts are always fun! This week, the kids got to make maracas after one of our Stroller Strides classes, and boy, were they a hit! And a delicious new recipe to find its way to our kitchen is Mexi Mac and Cheese. The name says it all – it’s a cheesy pasta-y meaty Mexican bowl of goodness. Fluffy & Yummy Banana Pancakes!
We love bananas in this house. We eat them for breakfast, a quick on-the-go snack, my pregnancy snack with peanut butter and chocolate chips, and of course we use them for baking. So we always have a large bunch of them in the kitchen, ready to be eaten, at all stages of ripeness.
Zara has rejected a lot of food this week because she is experiencing some serious teething pain. She’s been rocking just four teeth for several months now, and finally the next two are ready to poke through, but she is not happy about the process right now. Even her favorite foods are being pushed away this week. So this morning I decided to see how she would do with banana pancakes, and she gobbled them up! Score! Continue reading
St. Patrick’s Day Shepherd’s Pie
Happy St. Patrick’s Day! Did you do anything to celebrate? Normally I probably would have enjoyed a green beer, but not this year. 🙂
I love that there is a day every year when (mostly) everyone wears my favorite color. It was great seeing the green today! Zara and I rocked our green for this morning’s Stroller Strides class, where we searched for gold at every station. After class, there was a St. Patrick’s Day themed craft where the kids made pots of gold at the end of a rainbow. While I worked on Zara’s craft, she was more interested in getting down and walking around. 🙂 Continue reading
Chicken Pot Pie from scratch
This is one of those recipes that never has to be made the same way twice. Use what vegetables you have! Every time I’ve made it, there are requests for seconds. I like to buy a rotisserie chicken from Costco and use the meat from that. I also add cheese, which I haven’t seen in another chicken pot pie recipe, but hey, we like cheese! Peanut Butter Chocolate Chip Cookies
